Tips for Making Tender Mutton 65

To make the mutton 65, we need mutton. So it will be better to have boneless mutton pieces or little to no bones.

Mutton pieces take more time to cook than chicken. Therefore, boiling the pieces as we did is better, or frying them will be tough. If not, then add raw papaya powder or pulp to the marination. You can also add market bought tenderizer as well.

Majorly the flavours in this dish come from salt, ginger, garlic, red chilli, and black pepper. In addition, turmeric and red colour are added for colour. These are the essential ingredients of the recipe.

Some people like to add yoghurt to the imagination, while some don’t. Also, one can add lemon juice for some tanginess.

However, sometimes more ingredients are in use for marination. For example, spices like cumin powder, coriander powder or seeds, garam masala, or the readymade 65 masalas are used to marinate the mutton.

To get a crispy layer of coating on the mutton pieces, add rice flour, cornflour, or all-purpose flour. Adding egg white or whole egg will give it more binding. But you can skip adding the egg.

Apart from all these, you can add Chinese sauces like red chilli sauce, soy sauce, vinegar etc., as we had. We are also adding tomato ketchup, but it is an optional ingredient as not many people prefer adding these.

All the above things are for marination. For tossing, you can temper green chillies and curry leaves. However, tossing fried potato strips with these will be equally delicious. Capsicum, Garlic cloves, and onions are good options for the same.

Generally, it is common to fry the mutton. However, if you do not wish to fry the pieces, you can air-fry them. You must pre-heat the air fryer for five minutes at 400 degrees Fahrenheit. Cook the mutton pieces for six minutes in it. Toss them and cook for another five minutes.
