Take a vessle and boil chicken with salt and water till the chicken tender for about 20 min. Take out chicken pieces and shred the chicken. Keep aside chicken stock.
In a wok, heat the oil and add maida (gram flour). Saute it till its color changes to a golden brown.
Now add chicken stock, chilies, shredded chicken, soya sauce, green chilly sauce, salt, and Ajinomoto. Mix it well for 5 minutes on a low flame. And then remove from heat.
Add mashed potatoes to the mixture and mix it well. Make small balls out of it give a cutlet shape using a hand.
Beat eggs in a bowl with a pinch of salt. Dip the cutlets into the egg mixture and deep fry in hot oil till golden brown.
Take out from oil. Crispy Chinese Chicken Cutlet is ready to serve hot.
