Meanwhile, wash and blend the mint leaves with fennel seeds.
Boil the rice with half salt and keep it aside to cool. (Don’t overcook)
Heat oil with a medium flame once hot add muster seeds when it splits add bay leaves, cloves, curry leaves, chana dal one by one.
When you get nice aroma add sliced green Chili, red Chili, onion and ginger garlic paste one by one. fry the stuff until it turns transparent.
Then add blended mint leaves with appropriate salt (don’t forget that half of the salt already added in rice) and continue to cook until it gets separated from the oil.
Once it did add rice and blend the mix thoroughly and continue to cook 5-6 minutes under a lower flame.
Finally, add ghee and garnish with fried ground nuts, cashew and coriander leaves.
Homemade style simple & healthy mint leaves rice is ready to serve. This goes superbly with any kind of fries, chips, boiled egg, papad, and curd.
