The cheesy garlic bread recipe that I am sharing here today is a bit different. Yes, it is different compared to garlic bread served at pizza stores. This one is loaded with a monstrous amount of cheese.

Fair warning: the recipe requires special attention & exact measurements. A little more or less will spoil your entire recipe. So, pay attention to details and don’t skip any step or ingredient. Most importantly, don’t rush the process.

To make cheese-loaded cheesy garlic bread, we will understand the making process first. After that, we will scan the ingredient list. Let’s begin.

Making Cheesy Garlic Bread at Home

First thing first, you need an oven. Yup, avoid making oven recipes in nonstick kadhai or a pressure cooker. It’s a lengthy process, and you don’t want to mess up, in the end, baking it in a cooker.

The process involves making the dough first. Then garlic mixture to brush the bread made out of the dough. Finally, your garlic dough loaded goes into the oven. Let’s make the dough.

Making the Dough

To make the dough, you need active dry yeast or instant yeast. Yeast, whether active or instant, helps leaven the bread. It provides an airy & light texture to the dough.

The only difference between active dry yeast & instant yeast is water. Active dry yeast needs to be dissolved in water before use. On the other hand, one can mix instant yeast as well.

Add all-purpose flour to a bowl. Make space in the middle & add sugar, dry yeast & water. Cover the bowl & leave it for 10-15 minutes. The yeast will thrive. Now you can knead the dough using water. Once the dough is kneaded, allow it to rest for another 5-10 minutes.

The timing is essential. Don’t disturb the yeast process before at least 10 minutes. The best timing is to keep it for 15 minutes to get nice & soft dough.

Making the Garlic Mixture Filling

Butter is what we require here to saute our cheesy garlic bread seasonings. Since we will bake it in the oven, there’s no need to heat the garlic mixture. For this, you will need oregano, red chilli flakes, ginger-garlic paste, green garlic, black pepper, and salt.

Now that we are making garlic bread, we will use both green garlic & garlic paste. Moreover, the green garlic will provide a unique texture to the recipe. Save a small part of the mixture to brush in the end.

Spread the garlic mixture filling

Make a thick chapatti out of the dough. If your dough is way too sticky, apply some cooking oil & knead it. Spread the mixture over the surface. Add capsicum pieces & cheddar cheese.

Use a moderate amount of cheddar cheese. If you want it cheesier, then add some more.

Remember, you have to use only half a portion of the roti. Leave the other half empty to use as a cover. The final output will look similar to Gujarati Ghughraa or half-moon. Refer to recipe videos or images to get an exact idea.

Oven Temperature Settings

We all know that preheating the oven is essential. Apart from the preheating temperature & time, the baking takes only 10-12 minutes. However, temperature settings & timings are subjective. It depends on your baking machine & above all, it heavily varies from one device to another.

I have baked my cheesy garlic bread in Bajaj OTG 200 TMSS. The following are the settings.

  • Preheat OTG for 10 minutes at 150º C.
  • Bake for 12 minutes at 150º C.

If you have the same OTG as mine, then the above settings are perfect.

What You’ll Need For Cheesy Garlic Bread

All-Purpose Flour – 120 gm

Our garlic bread will have maida, aka all-purpose flour coating. Wheat or any other flour won’t work. You, me & everyone knows that maida is perfect for such type of recipes. Therefore, do not replace it.

Dry Yeast

I have explained above in detail what dry yeast does. Without yeast, cheesy garlic bread is not possible. Once again, allow the yeast to thrive properly without disturbing it. You can use instant yeast instead of dry yeast.

Seasoning items

Sugar, oregano, chili flakes, ginger-garlic paste, green garlic, pepper & salt are our seasonings. Each one of them has a unique taste profile. Skipping any of them could alter the overall taste of the recipe. Hence, use them all, especially the garlic, because we are making cheesy garlic bread.

Butter or Cooking oil

Butter is to saute the seasonings in the oven. On the other hand, cooking oil has kneaded the dough. You can use butter for kneading the dough if you want. On the contrary, you can’t use cooking oil to make the garlic mixture. Nope, use only butter.

Cheddar Cheese

Regular cheese is a big NO-NO. Cheddar cheese, when melted will give threads similar to those at the pizza stores. Yeah, they use cheddar cheese. Cheddar is readily available in the superstore. Hence, go for it.

Capsicum

Capsicum is the only vegetable we will use in this recipe. Yellow, green & red chopped capsicum evenly layered in our cheesy garlic bread gives the much-needed teekha flavour. Instead of using three different colours of capsicum, you can use any one of them. The choice is yours.

Add water gradually as per requirement. Follow the exact measurements to bake a super delicious, heavily loaded cheesy garlic bread.
