Carrot Poriyal Recipe-How To Make Shallow Fry With Coconut
Carrot Poriyal recipe is a simple & picturesque recipe in South Indian cuisine.
We can prepare Carrot Poriyal solely or with a mix of some other vegetables like beans, potato, greens peas, beetroot etc.
I am presenting you simply shredded carrot with coconut. You can also try the same with finely chopped carrot, with or without onion & tomato and you can also try red chilies instead of green chilly.
Ingredients of Carrot Poriyal Recipe
Carrot shredded-1 bowl
Coconut grated -1/4 bowl (tune to taste)
Onion-1 small (optional)
Chana dal-1 tablespoon
Green chilly 2-3
Garlic (smashed) 3-4 pieces
Salt and water - as required
Oil-1 tablespoon
Turmeric powder a pinch
Mustard seeds- 1/2 tablespoon
Curry and coriander leaves
Steps for Carrot Poriyal Recipe
Step 1
Heat oil with a medium flame once hot, add mustard seeds, when it splutters, add chana dal, green chilly, smashed garlic and curry leaves wait until it turns into brown.
Step 2
Add onion and fry until it gets the transparent look.
Step 3
Add shredded carrot with a pinch of turmeric powder, required salt and spray a spoon of water.
Step 4
Cover the lit and cook with a medium flame. (Check and stir the mix often also avoid to overcook)
Step 5
Once it cooked garnish with coconut and coriander leaves and allow to stay 1-2 minutes in the low flame, then switch off the flame.
The refreshing delicious South Indian style carrot poriyal recipe is ready to serve. Enjoy this with plain rice or curd rice.
