Mix veg muthiya is a popular Gujarati snack. It is one of my favourites. Along with being tasty, these muthiya are dense & tummy filling.


There are three words viz mix, veg & muthiya. Out of which, muthiya is a Gujarati term. It means the gripping actions of the hand. The word muthiya comes from the process of making traditionally. On the other hand, words like mix & veg are pretty self-explanatory.

What is Mix Veg Muthiya?

A soft dough out of vegetables, spice, masala powders & herbs is made. Further, this dough is divided into equal-sized dumplings. These dumplings are, after that, steamed. Finally, the dumplings are cut into pieces after steaming. Shallow frying is the last thing. That’s our vegetable muthiya.

Since we know what it is, let’s make them. First, of course, we will start with the ingredient list & then proceed to cook.

Things Required For Mix Veg Muthiya

The item list is ridiculously long. But believe me, it is worth it. I mean, the flavourful combination of vegetables, herbs, spices & masala powders will melt your taste buds. So let’s look into the item list. Here you go.

Fresh Vegetables & Herbs

To make veg muthiya we will need several vegetables & fresh herbs. For instance, bottle gourd, carrot & fenugreek leaves are our veggies. On the other hand, coriander, green chilli, ginger-garlic & green chilli paste are our fresh herbs.

If you pay attention, we will be using both whole green chilli & paste. Both are for flavouring purposes. The rest of them are self-explanatory.

Masala Powders

After veggies, we will need masala powders. Coriander powder, turmeric powder, garam masala & salt are a few to name. All of them are already in your kitchen closet.

Flours

There are three basic flours we require here: gram flour, wheat flour & semolina (suji). Flours will actively bind all the ingredients together. Therefore, please don’t skip any of them.

Cooking Oil & Water

There’s only one thing I can tell you about cooking oil & water. Do as directed. I mean, first, measure the quantity & then add. Liquid items in a recipe can either make or break. Hence, act wisely.

Other Items

Jaggery, lemon juice, asafoetida & baking soda are miscellaneous items that we need. Although I am calling them miscellaneous, still they play a critical role in this recipe. So once again, please do not skip any of them.

Tempering Mix Veg Muthiya

Making Mix Veg Muthiya at Home

The entire recipe includes three essential steps. Read them below.

Preparing Dough

The muthiya dough will be dense, although there’s baking soda in it. So there’s only one thing you should take care of. The dough must be soft. Hence integrate enough oil while kneading the dough.

Steaming

Once the dough is ready to make sizeable dumplings out of it. An aluminium mould & steam your dumplings for 10-12 minutes. Be careful while dealing with hot vessels.

Frying Mix Veg Muthiya

It is the final stage of cooking mix veg muthiya. Cut your steamed dumplings into pieces to further fry them. Watch the recipe video to understand the process.
