Ingredients of Egg Lababdar

  • Water - to boil
  • Tomato - 2 pcs (big)
  • Cashew - 1 tbsp (whole)
  • Ginger - 2 pcs (cut)
  • Garlic - 5-6 cloves (whole)
  • Dry Red Chilies - 4 pcs
  • Oil - 5 tbsp
  • Bay Leaves - 2 pcs
  • Cinnamon - 1 stick
  • Star Anise - 1 pc
  • Cardamom - 4 pcs
  • Clove - 2 pcs
  • Black Pepper - 5 pcs (whole)
  • Cumin Seeds -1 tsp
  • Onion - 250 gm (chopped)
  • Coriander Powder - 1 tsp
  • Turmeric Powder - 1 tsp
  • Red Chili Powder - 1 tsp
  • Salt - 1 tsp
  • Coriander - 1 tbsp (chopped)
  • Water - as needed
  • Eggs - 5 pcs (boiled) (cut in half)

Steps for Egg Lababdar

  • In a deep vessel, boil water. Add tomato, cashew, ginger, garlic, and red chillies. Blanch them to keep the flavours and colours stored. That is why the gravy has an enticing colour. Choose ripe and red tomatoes. And make sure the tomatoes are not sour. Onions too contribute to the base and also the thickness of the gravy. First, we will blanch tomato, cashew, ginger, garlic, and red chillies in a deep vessel and blanch them.
  • Remove the skin from the tomato. Then blend every ingredient to paste in a mixer jar. Cashews will add the required thickness & richness to the gravy. Doing this will give us a creamier gravy.
  • Heat oil in a pan. Add bay leaves, cinnamon, star anise, cardamom, clove, black pepper, and cumin seeds, and temper them. These ingredients will not only be providing delicious flavours to the dish but also will make it temptingly aromatic.
  • Now add onion and saute it. Add coriander powder, red chili powder, turmeric powder, and salt to it. Add coriander and mix everything well.
  • Add the paste to it and stir. Also, add water as needed.
  • Now place boiled eggs on it. We need hard-boiled eggs for this. Cover it with a lid and cook for 10-12 minutes. Therefore, the number of eggs we are using is adjustable as per your liking in this recipe.
  • Egg Lababdar is ready.
