1. Pan size
Size matters when we are talking about frying pan. Typically we Indians prefer multifunctional items. For example, a frying pan must not only fry eggs but also cook. Yeah, you heard that right. Hence we need to take care that our frying pan is big enough.
Although this may be true yet pan size heavily depends on other factors. For instance, the number of family members & what’s being cooked in it. For those making a single egg omelette, a small pan is enough.

#Hard-anodized aluminium
Aluminium material is widely used in making kitchen utensils. Since aluminium is lightweight, the cookware becomes easy to handle. Not only this, but aluminium heats faster than cast iron. Moreover, the heat distribution is uniform in aluminium pans.
On the other hand, aluminium pans can cause oil stains. In short, it may harm your health in the long run due to food reactions.
#Cast iron
Cast iron is heavy but non-reactive to food items. So unlike aluminium, it takes a little longer to heat. However, the heat distribution is uniform, just like aluminium.

Now that’s something you should be looking for in a frying pan. Popular kitchenware brands manufacture pans with 3 or 4-layer coating. Those pans are expensive, but the quality of the coating is premium. Even if you use a metal spatula, knife or spoons still the coating won’t come out.
The poor quality non-stick coating will easily wear out in the second or third wash. Hence, remember this important point while buying a frying pan.
5. Riveted handles
