Lehsun Chatkara | Chatpata Garlic

Ingredients of Lehsun Chatkara

  • Garlic - 300 gm (Whole)
  • Turmeric Powder - 1 tsp
  • Salt - as needed
  • Vinegar - 2 tbsp
  • Lemon Juice - 2 tbsp
  • Red Chili Powder - 1 tbsp
  • Coriander-Cumin Powder 1/2tbsp
  • Salt - as needed
  • Asafoetida - 1 tsp
  • Cooking Oil - 1 tbsp
  • Lemon And Chat Masala - to garnish

Steps for Lehsun Chatkara

  • Pick fine whole garlic. Make sure they are big enough in size. Keep the garlic skin intact. Do not remove the skin.
  • Make an incision vertically in the garlic. Repeat with all.
  • Add turmeric powder, salt, vinegar, lemon juice, and mix well. Set aside and allow the garlic to marinate for 15 minutes.
  • Now making the filling. Take a small bowl. Add red chili powder, coriander-cumin powder, salt, asafoetida, and cooking oil. Mix all the masala and make a fine paste to fill in the garlic.
  • Meanwhile, take the marinated garlic. Put a strainer and remove the lemon-vinegar liquid. Dry all the garlic. fill masala in the garlic. Use a knife to open wide the cut we made in the garlic. Have patience because it is a time-consuming task. Moreover, the garlic is wet hence they will resist.
  • Keep a knife to make a deep incision in the garlic if necessary. Once all the garlic is filled with the masala its time to fry them.
  • Take a deep vessel, add cooking oil, heat it. Once the oil is hot place the masala filled garlic into the oil and fry. Keep the flame low and make sure garlic doesn't burn out. Dip all the garlic completely into the hot oil so that they fry evenly. Once all the garlic is fried take them out of the hot oil.
  • Cool them down and squeeze lemon juice on it. Additionally, sprinkle chat masala for taste. You can also sprinkle red chili flakes. Lehsun chatkara is ready.
