Turiya Patra Gujarati Shaak

Turiya Patra is a traditional dish of Gujarati cuisine. It is a combination of ridge gourd and steamed Patra. The recipe is spicy, tangy, and a little sweet too in taste.

Some people do not steam the Patra or taro leaves. But it is going to take a long time for this dish to cook. Therefore, it is suggested to steam them before cooking as it will reduce the time.

You can make a patra at home. It can be challenging initially, but once you have practiced it, then it is no difficulty. Yet, if you want, you can use ready-made patra from the markets.

Typically, Turiya Patra is a favorite of a Gujarati and is popular too. A must dish in the Gujarati wedding.

This vegetable is very healthy. Ridge gourd is low on calories and carbs. So it is a great option to have while on a low carbs diet. Plus, it helps to maintain a low sugar level in the blood.

Besides, the taro leaves or Patra are very nutritious as well. They are a rich source of vitamin A. Therefore, it is excellent for your eye-sight.

To enjoy this dish, serve it hot immediately with roti, chapati, puri, bajra no rotlo, or phulkas.

Ingredients of Turiya Patra

  • For Green Masala Paste
  • Garlic - 7-8 pcs (Whole)
  • Ginger - 3 pcs (1-inch size) (Whole)
  • Green Chili - 2-3 pcs (Medium) (Whole)
  • Coriander - As Per Taste
  • Main Ingredients
  • Ridge Gourd - 4 pcs (Medium)
  • Cooking Oil - 100 ml
  • Black Mustard - 1 tbsp
  • Turmeric Powder - 1 tsp
  • Salt - 1 tbsp
  • Coriander-Cumin Powder - 1 tbsp
  • Garam Masala - 1 tsp
  • Red Chili Powder - 1 tbsp
  • Green Masala Paste - 1 tbsp
  • Cooking Oil - 100 ml
  • Cumin Seeds - 1 tbsp
  • Curry Leaves - 8-10 pcs
  • Patra (Steamed) - 2 rolls

Steps for Turiya Patra

  • Take a mixer jar. Add garlic, ginger, green chili, and chopped coriander. Grind it and keep aside.
  • Take the ridge gourd and dice it as shown.
  • Take a pan and heat oil in it. Add black muster seeds and pop it.
  • Add turmeric powder and diced ridge gourd. Stir it and put a lid on the pan. Cook for 10 minutes.
  • Now add salt, cumin-coriander powder, garam masala, red chili powder, and mix it.
  • Add the green masala paste and mix again. Put the lid over it and cook for 5-7 minutes again.
  • Take another pan and heat oil in it. Put cumin seed and curry leaves. Temper them.
  • Now add the steamed and cut patra in it. Cook a little bit.
  • Then add this patra into the pan with ridge gourd. Mix it and cook a moment.
  • Turai Patra is ready. Serve hot.
