Maharashtrian Style Garlic Pickle Recipe

If you do not like too much saltiness and spice, you can balance it out with adding jaggery. It will then have all kinds of possible flavors.

Here, garlic is not cooked directly. So it will still possess the rawness and natural sharpness. To avoid that you can cook the garlic pods in some oil before making this pickle. Or can even mature the pods in the heat of the sun.

Maharashtrian style garlic pickle will not take long to prepare as well. However, you may need to keep it in storage for over a week to mature completely. You can use any sort of oil, depending on the taste you want to have in it.

Ingredients of Maharashtrian style garlic pickle

  • Garlic - 100 gm (Whole)
  • Turmeric Powder - 1 tbsp
  • Salt - 1 tbsp
  • Lemon Juice - 3 tbsp
  • Cooking Oil - 1 cup
  • Cumin Seed - 1 tbsp (Whole)
  • Fennel Seeds - 3 tbsp
  • Coriander Powder - 3 tbsp
  • Fenugreek Seeds - 2 tbsp
  • Mustard Seeds - 1.5 tbsp
  • Asafoetida - 2 tbsp
  • Rock Salt - 1 tsp
  • Kashmiri Red Chili Powder - 1 tbsp (for red color)
  • Red Chili Powder - 1 tbsp
  • Cooking Oil - 250 ml (Hot)
  • Vinegar - 2 tbsp

Steps for Maharashtrian style garlic pickle

  • Take a bowl and add peeled but whole garlic.Add turmeric powder, salt, and lemon juice. Mix well. Allow it to marinate for 10 mins.
  • Now take a pan, add cooking oil and heat it.
  • Add cumin seeds and fry for 10-20 seconds. Add fennel seeds, coriander powder, fenugreek seeds, mustard seeds, asafoetida, and rock salt. Mix well and cook for 20 to 30 seconds.
  • Add Kashmiri red chili powder and mix. Kashmiri red chili powder gives natural red color. Add red chili powder and mix.
  • Now add the masala mix to the marinated garlic bowl. Mix everything well once again.
  • Add hot cooking oil to the garlic mix. Fold the mixture, don't stir vigorously.  Make sure there are no lumps, break if any but smoothly.
  • Add vinegar and mix again. Maharashtrian style garlic pickle is ready. Store it in a glass bottle or container.
