Caribbean Jerk Chicken With Rice is a delicious Caribbean one-pot meal recipe made with chicken drumsticks, rice, and aromatic spices. Really very easy to make and takes 30 minutes to cook. Perfect choice for less spicy or mild taste lovers.

This was the first time I made this recipe trying out from the internet. I must tell you that, I fell in love with this yummy rice recipe just like my Butterly Arabic Roast Chicken.

Ingredients of Caribbean Jerk Chicken With Rice

  • Chicken - 500 gm or 6 Pcs (Drumstick)
  • Rice - 4 cups (Basmati)
  • Garlic Paste - 1 tbsp
  • Ginger Paste - 1 tbsp
  • Green Chili - 2 or 3 Pcs
  • Black Pepper Powder - 1.5 tsp
  • Spring Onion - 1 Cup
  • Thyme (Ajwain) - 1 tsp
  • Bay Leaves - 3-4 Pcs
  • Allspice mix - 1 tsp
  • Salt - To Taste
  • Lemon juice - 3 tbsp or 2 lemons
  • Edible Oil - 2 tbsp
  • Sugar - 1 tbsp
  • Nutmeg - 1 Pcs
  • Soya Sauce - 2 tbsp
  • Onion - 1 Pc Sliced

Steps for Caribbean Jerk Chicken With Rice

  • Take the grinder or food processor and grind spring onion, garlic paste, ginger paste, red chilis, sugar, allspice mix, thyme, lemon juice, nutmeg, and salt. Make a thick paste.
  • Take a small bowl to marinate the chicken drumsticks. Add the paste prepared in step 2 along with soya sauce and edible oil to the chicken drumstick. Keep it aside for sometime.
  • Take rice in a pot. Wash and rinse the rice in a strainer with cold water and keep it aside.
  • Hear a large skillet and add heat the oil. Ad the marinated chicken in a high walled skillet and let it cook for 5-10 minutes. Cook until it turns light brown.
  • When 80% cooked remove the chicken from the skillet and add the sliced onion to it. Saute for 2-3 minutes and the rinsed rice, bay leaves and chicken stock to it. Stir it. Cook on high heat until half done.
  • Add the semi-cooked chicken drumstick to it and cover the pot. Let it cook for another 20-25 minutes.
  • Your delicious Caribbean Jerk chicken with rice is ready to serve. Garnish it with freshly chopped spring onion and serve it.
