Veg Dum Biryani – Hyderabadi Veg Biryani

Veg Dum Biryani is a delicious rice delicacy made with fresh veggies blended in Indian spices, yogurt, and basmati rice. A perfect dish to fall in love with.

Why should only the non-vegs have all the taste? This is for our veggie readers. I m a non-veg. I eat and cook both biryanis. According to me, Biryani is Biryani. Though it is veg or non-veg. Both have their own taste.

This time I thought to bring a twist to this recipe and it was just awesome. Just squeezed a half sweet lime in the preparation of the gravy and the taste just rocked.

This small twist made me the star of the day. My 13-year-old son gave me a wonderful compliment. The compliment was that ” Papa, Taste of this Veg Dum Biryani is just like the Kashmiri ChaCha’s Biryani”. Kashmiri Chacha is one of the famous Biryani makers in our city – Surat.

So let me not keep you waiting and start describing the recipe.

Ingredients of Veg Dum Biryani

  • For Rice
  • Basmati Rice - 250 gm
  • Salt -To Taste
  • For Veg Gravy
  • Potato - 2 Pcs Small
  • Cauliflower - 1 Pcs Small
  • Carrot - 3/4 Cup
  • Green Peas - 1/2 Cup
  • French Beans - 1/2 Cup
  • Capsicum - 1/2 Cup
  • Onion - 2 Pcs Medium
  • Yogurt - 1 Cup
  • Red Chili Powder - 1.5 tsps
  • Turmeric - 1/2 tsp
  • Biryani Masala - 1.5 tsp
  • Mint & Coriander Paste - 2 tsps
  • Salt - To Taste
  • Edible Oil - 2 tbsp
  • Saffron - 1 Pinch (Mix with 1/2 cup Water)
  • Bay Leaves - 3 to 4 Pcs
  • Cardamom - 2 to 3 pcs of 1 inch
  • Cloves - 5 to 6 Pcs
  • Sweet Lime - 1 Pcs Medium

Steps for Veg Dum Biryani

  • Take a deep pan, add water and boil. Add rice to it and add water according to your taste. Tip: As water is going to be drained put a bit of access salt when boiling.
  • Heat oil in a pan, add whole spices (cardamom, bay leaf and clove). Fry for 1 minute and then add chopped onion to it. Saute for about 2 minutes until it turns transparent. Now add Ginger Garlic paste, mix it then add red chili powder, turmeric, mint and coriander paste, biryani masala and salt to it. Cook for 5 to 7 minutes.
  • Add yogurt, and mix well. Cook for another 5-7 minutes or until oil starts to float. Now add veggies to the mixture. Mix it well. Add 1.5 cup of water and cook until veggies are done. Squeeze 1 sweet lime in it and cook until water dries. Keep it aside.
  • Take a rice pot, Make the first layer with boiled basmati rice, the second layer with the veggies mixture. Repeat these both steps once again and put the fifth layer of rice over it. Sprinkle the saffron water over it in a circular manner so that it reaches evenly. Arrange 2 -3 cloves and a small piece of cardamom over the rice and temper with 1 tablespoon of oil.
  • Finally, take a thin tawa and the pot for dum. keep it on dum for about 5-7 minutes. Your Aromatic Veg Dum Biryani is ready to serve.
