This auspicious day reminds us of the sacrifices of Prophet Ibrahim (Alaihissalam) and his beloved son Ismail (Alaihissalam). They surrendered to the will of Allah.

I go for prayers and then go for the holy sacrifice. The meat is then divided into 3 parts one for home one for relatives and the third for the poor. The taste of the meat of the holy sacrifice is always from heaven and the ingredients add to the taste of it.

The first thing I put in my mouth is the meat and in that also I start with Tawa Kaleji Gurda from the meat of the holy sacrifice. All of us in the family love this very much. The whole day is spent cooking different dishes of meat only.

Ingredients of Tawa Kaleji Gurda Masala

  • Kaleji (Mutton Liver) - 250 gm
  • Gurda (Kidney) - 200 gm
  • Ginger-Garlic Paste - 1 tsp
  • Green Chili Paste - 1 tsp
  • Black Pepper Powder - 1/4 tsp
  • Coriander Powder - 1 tsp
  • Turmeric Powder - 1/2 tsp
  • Salt - To Taste
  • Jeera Powder (Cumin Seeds Powder) - 1/2 tsp
  • Garam Masala - 1/4 tsp
  • Edible Oil - 2 tbsp
  • Lemon Juice - 1 tbsp

Steps for Tawa Kaleji Gurda Masala

  • Wash kaleji & gurda before beginning. Clean the thin skinny layer over it. Cut them into small dices. Take a bowl. Add kaleji, ginger-garlic paste, green chilli paste, black pepper powder, coriander powder, salt & garam masala powder. Mix well. Allow kaleji to marinate for 10-15 minutes.
  • Take a flat pan, add cooking oil and heat. Now add marinated kaleji to the pan. Shallow fry for 10-15 minutes.
  • Your Tawa Kaleji Masala is ready. Garnish it with fresh coriander & serve hot.
  • Making Tawa Gurda Masala
  • Take a bowl. Add the dices of gurda, ginger-garlic paste, green chilli paste, garam masala powder, red chilli powder, cumin powder, salt & coriander powder. Mix well. Allow it to marinate for 10-15 minutes.
  • Take a flat pan, add cooking oil and heat. Now add marinated gurda dices to the pan. Shallow fry for 10-15 minutes.
  • Your Tawa Gurda Masala is ready. Garnish it with chopped green chilli & lemon juice. Serve hot.
  • Making Goat Fat Fry
  • Take a flat pan. Add goat fat & salt. Mix well. Shallow fry for 10-15 minutes.
  • Your goat fat fry is ready. Garnish with lime wedges. Serve hot.
  • Making Tawa Kaleji Gurda Masala
  • Take a bowl. Add the dices of kaleji & gurda. Now add ginger-garlic paste, green chilli paste, garam masala powder, salt, cumin powder, coriander powder & turmeric powder. Mix well. Allow it to marinate for 10-15 minutes.
  • Take a flat pan, add cooking oil and heat. Now add marinated kaleji & gurda dices to the pan. Shallow fry for 10-15 minutes.
  • Your Tawa Kaleji Gurda Masala is ready. Garnish it with capsicum. Serve hot.
