Sweet Corn Pulav Recipe

Sweet Corn Pulav is simple and tasty rice with juicy sweet corn kernels and other veggies. It’s an ideal lunch box recipe which can be served with simple lentil based curries.

The sweetness of the corn and amazing seasoning makes this pulav flavorsome and also prepare it very fast. Pulavs are always tummy-filling and delicious to enjoy whether in lunch or dinner and loved by all ages.

You can prepare this Sweet Corn Pulav with ingredients like coriander, mint leaves, ginger, garlic, green chili, ghee, rice, water, oil, clove, black pepper, cardamom, cinnamon, star anise, bay leaf, javitri, curry leaves, onion, turmeric powder, boiled corn, and curd.

Because of curd, it gets tangy and sweet at the same time. Also, corns are a kid’s favorite veggie and loved by them in every form.

Ingredients of Sweet Corn Pulav

  • Coriander - 50 gm
  • Mint leaves - 10-15 pcs
  • Ginger - 4 pcs
  • Garlic - 10-12 pcs
  • Green chili (whole) - 5 pcs
  • Ghee - 50 gm
  • Rice (soaked) - 250 gm
  • Water - 1.5 glass
  • Salt - 1 tbsp
  • Cooking oil - 10 tbsp
  • Cloves - 6 pcs
  • Black pepper (whole) - 10-12 pcs
  • Cardamom - 5 pcs
  • Cinnamon - 1pcs small size
  • Star anise - 2 pcs
  • Bay Leaves - 4 pcs
  • Mace - 1 pcs
  • Curry leaves - 8-10 pcs
  • Onion - 1pcs large size
  • Coriander powder - 1 tbsp
  • Turmeric powder - 1 tbsp
  • Salt - 1 tbsp
  • Corn (boiled) - 150 gm
  • Curd - 100 gm

Steps for Sweet Corn Pulav

  • Meanwhile, grind fresh coriander, mint leaves, ginger, garlic, and green chili together. Keep it aside.
  • Now take a pan, heat it, add ghee and soaked rice. Saute the rice for 10 mins in ghee or till they start turning brown.
  • Add water and salt. Mix well. Cover the pan and cook for 15  mins.
  • Meanwhile, the rice is being cooked to prepare the curry. Take a pan, add cooking oil, and heat it.
  • Add clove, black pepper, cardamom, cinnamon, star anise, bay leaf, javitri, curry leaves. saute the masala for a minute.
  • Add onion and saute till onions are light brown. Then add coriander powder, turmeric powder, salt, and green coriander paste. Mix well.
  • Add boiled corn and curd. Mix again. Cook for 5  mins. Go back to the rice. they are cooked now. take out some cooked rice in a separate bowl to make space for the green curry.
  • Layer the rice in the pan properly. Now spread the green corn curry on the white rice. layer properly.
  • Once done bring in the rice bowl and spread the rice on the green curry evenly. Again spread the green corn curry on the white rice layer evenly.
  • Now finally the white rice layer on the green corn curry. Cover the pan and cook for 5 mins.
  • Sweet Corn Pulav is ready to serve hot for lunch or dinner.
