Sigdi Smoked Rice – Sigdi Smoked Rice Recipe

Sigdi Smoked Rice is a very aromatic and delightful rice dish made with boneless chicken, veggies, basmati rice, tandoori masala and other at home ingredients. It smoked flavor will make you go mad and forget everything. Loved by all ages especially elders. Very easy to make and great in terms of taste.

Usually, make this recipe when we are out on a day out trip. We make it and fill in a big pot and carry with us. At home, we usually tend to cook it when we are looking for some light meal.

Ingredients of Sigdi Smoked Rice

  • Chicken - 250 Gm (Boneless)
  • Rice - 4 Cups (Basmati)
  • Ginger-Garlic Paste - 1 tbsp
  • Red Chili Powder - 1.5 tbsps
  • Cumin Powder - 1 tbsp
  • Turmeric Powder - 1/2 tsp
  • Tandoori Masala - 1 tbsp
  • Edible Red Color - 1/4 tsp
  • Lemon Juice - 1 tbsp
  • Spring Onion - 1 Cup
  • Capsicum - 1/2 Cup
  • Edible Oil - 3 tbsps
  • Salt - To Taste
  • Soya Sauce - 1/2 tsp
  • Red Chili Sauce - tbsp
  • Vinegar - 1 tsp

Steps for Sigdi Smoked Rice

  • Soak the Basmati rice for 1/2 hour and then boil it with salt. Boil until 80% done. Drain the water and keep it aside.
  • Marinate chicken with lemon juice and salt for about 1/2 hour. Then add half of the ginger garlic paste, red chili powder, cumin powder, tandoori masala, edible red color and turmeric powder to the chicken. BBQ the chicken and shred the chicken.
  • Heat the pan and add oil to it. Add the remaining ginger garlic paste, red chili powder, soya sauce, red chili sauce, and vinegar to it. Add the shredded chicken to the mixture and mix it well. Cook for 2-3 minutes. Now add the boiled basmati rice and mix it well.
  • Take another small pan and add oil to it. Put the white part of spring onion and capsicum in it. Fry for 2 minutes and add it to the rice. Sprinkle the green part of spring onion over it and add keep on low flame for 10 minutes.
  • For the smoking purpose, make a small bowl shape with silver foil. Add 1 tablespoon oil in it. Heat a charcoal and put it in the bowl with oil made of silver foil. Cover the lid for 2-3 minutes so that the smoky aroma gets into the rice dish.
  • Your aromatic Sigdi Smoked Rice is ready to serve. Garnish it with some capsicum slices and enjoy the delightful recipe.
