Shahi Tukra Recipe – Royal Indian Bread Pudding

Shahi tukra is a traditional Mughlai dessert made with fried bread coated with sugar syrup and thickened milk garnished with dry fruits and rose petals. The name itself is shahi which means royal—a royal treat for your special guests.

An excellent choice for dinner parties and festivals. Diwali is approaching, which can be a great option to give a royal treat to your guests. Simple and easy to make. Hardly takes 20-30 minute to prepare it.

Indian culture is a mixture of many traditions; one of them is the Mughal. Therefore, many dishes in India have the essence of Mughal cuisine.

I cook this recipe for my dear friend every Diwali. It is their demand. On the day of Diwali, we visit him with a big dish of Shahi Tukra to home. And celebrate the bond of our friendship with this royal dessert.

When appropriately made with a balanced sugar level, it is just going to blow off your mind, and you will long for more and more. The best part about Shahi Tukra is that people of all ages love it. However, it is elders, children or young.

Ingredients of Shahi Tukra

  • For Sugar Syrup
  • Sugar - 3 tbsp
  • Water - 3 Cups
  • For Rabri / Milk Mixture
  • Milk - 4 Cups
  • Sugar - 2 tbsp
  • Custard Powder - 1 tbsp
  • For Garnishing
  • Rose Petals - 5 to 6 Petals
  • Saffron - 1 Pinch
  • Cashew Halves - 2 tbsp
  • Almonds - 5 pcs (Sliced)
  • Other Ingredients
  • Bread - 5 to 6 slices
  • Edible Oil - For Frying

Steps for Shahi Tukra

  • Take a deep pan and pour milk into it. When Milk starts to simmer add sugar to it. Cook for approximately 5-7 minutes. Once the sugar is completely dissolved add 1 tablespoon of custard powder to it. Cook until thick consistency. Let it cool and keep it aside until you prepare the sugar syrup.
  • Take another pan and add water to it to make sugar syrup. Let it simmer and add sugar to it. Cook for 5  minutes or until it is thick. Keep it aside and let it also cool.
  • Take bread slices and cut them into triangular shapes from the middle. Take another pan and add edible oil or ghee to fry the sliced bread. Fry until lightly golden.
  • Dip the fried bread directly into the sugar syrup prepared earlier. rest for 2-3 minutes so that the bread soaks the sugar syrup properly.
  • Take a serving pan and place the sugar syrup coated bread slices onto it. Pour the thickened milk mixture over it and garnish it with sliced dry fruits and rose petals. Your Shahi Tukra is ready. Serve chilled.
