Ingredients of Ridge Gourd Shallow Fry Recipe

  • Ridge gourd - 2 cups (peeled and cubed) (Silky Gourd) (Peerkangai)
  • Onion - 1 small(chopped)
  • Tomato - 1 small - optional (chopped)
  • Garlic - (3-4 cloves) (Crushed)
  • Turmeric Powder - a pinch
  • Red Chili Powder - 1/2 tbsp
  • Salt and Water - as needed
  • Oil - (1-2 tbsp)
  • Mustard seeds -1/4 tbsp
  • Curry and coriander leaves

Steps for Ridge Gourd Shallow Fry Recipe

  • Peel the skin of the Gourd and cut into medium-sized cubes. chopped onion and tomatoes.
  • Heat oil in a pan, add mustard seeds, when it splutters, add chopped onions,  garlic, turmeric powder, and curry leaves. saute until it turns glassy.
  • Then add tomato and stir until it becomes smooth.
  • Add cubed ridge gourd, required salt and sprinkle a spoon of water. (since the vegetable itself watery so no need to add much)
  • Close the lit and cook on a low flame once it half boiled add Chili powder and allow to cook. (stir in between)
  • Once the ridge gourd becomes smooth and creamy switch off the flame and garnished with coriander leaves.
