Makai Dhokla Recipe (Gujarati Style)

Makai Dhokla is an innovative snack recipe. It originally is a Gujarati dish that is itself prepared from maize flour. Here, kernels of corn are ground and added to the batter, with a tempering of mustard.

Ingredients of Makai Dhokla

  • Semolina - 1 small bowl
  • Lemon Juice - 2 tbsp
  • Water - 1/2 glass
  • Sweet cCrn Kernels - 1 medium bowl
  • Green Chili Paste - 1 tbsp
  • Salt - 1 tsp
  • Turmeric Powder - 1 tsp
  • Eno Powder - 1 tbsp
  • Water - 1 tbsp
  • Cooking Oil - 1 small bowl
  • Mustard Seeds - 1tsp
  • Sesame Seeds - 1tbsp
  • Curry Leaves - 10-12 pcs

Steps for Makai Dhokla

  • Take a bowl, add semolina, lemon juice, and water. Allow the semolina mix to rest. Keep it aside.
  • Take a mixing bowl. Add sweet corn kernels & grind it.
  • Now take the semolina mix. Add ground makai to it.
  • Add green chili paste, salt, and turmeric powder. Mix everything well to make a fine thick paste. Again keep the mixture aside and allow it to rest.
  • Meanwhile, grease the mould and keep it aside. Now take the semolina-makai mixture.
  • Add eno powder and 1tbsp water. Mix well. Immediately add the mixture to the greased mould. Keep in mind to not rest the mixture after adding eno powder.
  • Tap the mould to spread the mixture evenly. Now steam it for 12 minutes. Your steamed makai dhokla is ready now. Take a toothpick and dip into the makai dhokla cake to check whether they are steamed well or not.
  • Now take a pan, add cooking oil and heat it.  Add mustard seeds and saute till they pop.Add sesame seeds and saute till sesame seeds are light brown. Add curry leaves and saute one final time for 10 to 20 seconds.
  • Place the steamed makai dhokla in a dish. Pour the hot oil mixture on the dhokla evenly.
  • Makai dhokla is ready. Enjoy it with chutney or sauce.
