Guvar Dhokli or Guar Dhokli Gujarati Recipe

Guar dhokli is a traditional Gujarati dish in which we cook cluster beans and flour dumplings with spices. This dish is easy, stomach-filling, delicious and healthy.

Dhoklis is similar to pasta. So you can also consider it as an Indian version of pasta. To not get bored, you can always make changes in the ingredients of dhokli.

Guar is rich in iron and fibre. So it is not only tasty, but this also makes it a healthy recipe.

Guar is a bit bitter. Therefore, we add jaggery and lemon juice to it for balance. Sometimes, we can even add sugar to the recipe for the same.

Some people like to eat this dish dry. In comparison, some like to eat it with its curry. Both ways are acceptable depending on how you want to eat them. Serve it with roti or phulka.

The combination of guar and dhokli is not common. Yet, the presence of ajwain and ginger & garlic makes it more flavoursome.

Ingredients of Guar Dhokli

  • For Guar
  • Edible Oil - 2 tbsp
  • Cumin - 1 tbsp
  • Kasuri Methi - 1 tbsp
  • Ginger - Garlic Paste - 1 tbsp
  • Asafoetida - 1 tbsp
  • Coriander-Cumin Powder - 1 tbsp
  • Turmeric Powder - 1 tbsp
  • Red Chili Powder - 1 tbsp
  • Onion - 1 pcs small size (Chopped)
  • Salt - as needed
  • Tomato Puree - 2 pcs
  • Guvar - 300 gm (cluster beans)
  • Water - 1/2 glass
  • For Dhokli
  • Wheat Flour - 1/2 bowl
  • Edible Oil - 1 tbsp
  • Carom Seeds - 1 tbsp
  • Black Sesame Seeds - 1 tbsp
  • Salt - to taste
  • Turmeric Powder - 1 tbsp
  • Green Chili Paste 1 tbsp
  • Green Garlic - 1 tbsp (Chopped)
  • Coriander - 3 tbsp (Chopped)
  • Methi Leaves - 4 tbsp
  • Jaggery - 1 tbsp
  • Lemon Juice - 1 tbsp
  • Water - 1 cup

Steps for Guar Dhokli

  • Guar Curry
  • Take a pan and heat it.Add edible oil, ajwain, Kasuri methi, Hing powder, coriander-cumin powder, turmeric powder, red chili powder, chopped onion, and salt. Mix everything well.
  • Add tomato puree. Mix it and cook for a minute.
  • Add guar, mix and then add water. Mix it again.
  • Now cover it with the lid. Keep the flame medium. Cook till guar is soft. The guar vegetable curry is ready.
  • For Dhokli
  • Take a bowl. and add wheat flour.Add cooking oil, ajwain, black sesame seeds, salt, turmeric powder, green chili paste, chopped green garlic, chopped coriander, methi leaves, jaggery, lemon juice. Mix everything well.
  • Add water as much needed. Mix it and make a dough.
  • Now make small dumplings from the dough. Flaten the dumpling with your hand and roll it.
  • Steam the dhokli. Allow to cool down before adding it or else it will lose the shape. Cooling is necessary.
  • Now place the steamed dhokli very carefully in the guar vegetable curry on low flame.
  • Guvar Dhokli is ready.Garnish with coriander and serve hot.
