How To Prepare Bitter Gourd Poriyal Recipe/Bitter Melon

This tastes mild bitterness with the tone of fried onion, ginger and coconut flavor. The texture looks like the combo of white and green chunks.

Ingredients of Bitter Gourd Poriyal Recipe

  • Bitter Gourd - 1 cup (chopped)
  • Onion - 1 chopped medium size
  • Green Chili - 4 to 5
  • Ginger - a small piece chopped
  • Coconut - 1/2 cup Shredded
  • Coconut Oil - 2 tbsp
  • Mustard Seeds - 1/4 tbsp
  • Turmeric Powder - 1/4 tbsp
  • Curry Leaves - as needed
  • Coriander Leaves - as needed
  • Salt - as required

Steps for Bitter Gourd Poriyal Recipe

  • Wash and chop the bitter gourd. If it is having seeds remove it and slice.
  • Clean and chop the onion and chilis.
  • Heat coconut oil with a medium flame once hot add mustard seeds when it splits add curry leaves, sliced chili & chopped ginger.
  • Fry until it turns the color. Add onions and turmeric then continue to cook until it turns into transparent.
  • Then add the bitter gourd with appropriate salt and mix it thoroughly.
  • Continue to cook under a low flame until it cooks well. (Stir often and don't add water)
  • Once it cooked, add shredded coconut & cook 3-5 minutes. Switch off the flame and garnish with coriander leaves. This goes well with hot rice and any kind of variety rice.
