Aloo Egg Curry | Anda Curry

Aloo Egg Curry is a delicious and spicy Indian curry. It is a perfect choice to serve to surprise guests as it is quick and easy to make.

Egg dishes are trendy in India. One will find several varieties of dishes consisting of the main ingredient as eggs. We are going to it in dry as well as gravy form.

Aloo Egg Curry is one such variation of an egg dish. Goes well with rice, naan, pav, or chapati. If you want to have it with pav or chapati, then the curry needs to be a bit thick.

A similar version is available in Bengali cuisine. The dish is made using their five spices crushed together, and mustard seeds are tempered to make the curry. It is also a bit sweetened with sugar.

Assamese also have their version of this curry called Aloo Konir Dom. They typically eat it with steamed rice. In comparison, their version looks red hot and spicy. It is very similar to what we are making here.

Adding crushed dry fenugreek or curry leaves is also an option. It will enhance the flavor and aroma of the dish. But we are not using it as it is entirely optional and as per your choice. Likewise, you can experiment with this recipe as per your taste.

Ingredients of Aloo Egg Curry

  • Potato - 2 pcs (Medium Size)
  • Boiled Eggs - 5 pcs
  • Turmeric Powder - 1 tsp
  • Salt - 1 tbsp
  • Cooking Oil - 100 ml
  • Cumin Seeds - 1 tsp
  • Cinnamon - 1 pcs (An Inch Long)
  • Red Chili - 3 pcs
  • Star Anise - 1 pcs
  • Clove - 5 pcs
  • Black Pepper - 8-10 pcs
  • Cardamom - 3 pcs (Whole)
  • Onion - 2 pcs (Medium Size) (Chopped)
  • Ginger-Garlic Paste - 1 tbsp
  • Red Chili Powder - 1 tsp
  • Coriander Powder - 1 tsp
  • Turmeric Powder - 1 tsp
  • Tomato Puree - 2 pcs (Medium Size)
  • Coriander - As Per Taste
  • Water - As Required

Steps for Aloo Egg Curry

  • In a bowl put cubes of potatoes and boiled eggs. Add turmeric powder and salt. Mix them.
  • Add oil to a heated pan. Put the cubes of potatoes in it and cook them for some time. Transfer them to a plate and keep aside.
  • In the same pan add the boiled eggs. Roast them a little and transfer them to the plate. Keep them aside.
  • In the same heated oil add cumin seeds, cinnamon, red chili, star anise, cloves, black pepper, and cardamom. Stir and temper them.
  • Then add chopped onion and ginger-garlic paste. Stir it.
  • After that add red chili powder, coriander powder, turmeric powder, tomato puree, and mix everything.
  • Add chopped coriander, potato cubes, and water as required.
  • Finally, add boiled eggs and carefully mix them. Cover it with a lid and cook for a bit or until it shimmers.
  • Aloo egg curry is ready.
