How To Make Surti Papdi Undhiyu?

Surti Papdi Undhiyu is a traditional dish from the Surat region of Gujarat state in India. It is a dish full of vegetables, nutrients, and multiple flavors.

This dish is sour in taste with a little bit of sweetness in it. Moreover, it also has a nutty taste because of ingredients like groundnuts and sesame.

Surti Papdi Undhiyu is a winter special dish comprising of vegetables available in winter. It is also a hallmark of Gujarati cuisine. The name of this dish is from Gujarati word ‘undhu’, meaning upside-down. It is a traditional dish cooked in earthen pots that are termed as ‘matlu’ which are fired from above. This gives the dish a unique earthy flavor and aroma.

Though Undhiya is a specialty of Surat, many other regions of Gujarat also cooks it. Surti style, Kathiyawadi style, and Matla Undhiyu are three popular variations of it.

People cook Undhiyu on special occasions and festivals like Uttarayan or Diwali. It is also a part of the menu in parties and get- to-gathers.

This dish is cooked in many steps and has a lip-smacking taste once prepared.  The cooking of this mixture is a very slow and time-consuming process. So one requires to have patience when cooking this dish.

Gujarati loves eating Undhiya with Puri, chilled chaas, aamras orShrikhand. You can also serve this healthy vegetable with soft phulkas, jowar roti or bajra roti.

Ingredients of Surti Papdi Undhiyu

  • For vegetable marination
  • Yogurt - 150 gm
  • Undhiyu Masala - 50 gm
  • Green-Chili Paste -1 tsp (ginger garlic and chili)
  • Turmeric - 1 tsp
  • Cumin-Coriander Powder - 1 tsp
  • Garam Masala - 1 tsp
  • Salt (as per taste)
  • Tomato Puree - 2 pcs (medium size tomato)
  • Green Garlic - 50 gm
  • Green Methi Bhaji - 1 bowl (100gm)
  • Coriander -1 small bowl (50 gm)
  • Lemon Juice - 2 pcs
  • Cauliflower - 200 gm
  • Papdi - 200 gm
  • Tuvar dana - 200 gm
  • Green peas - 150 gm
  • Potato - 200 gm
  • Sweet potato - 200 gm
  • Whole tomato - 200 gm
  • Brinjal - 200 gm
  • Flavour Potli
  • Ajwain Leaves - 3 pcs
  • Coriander - 1/2 tsp
  • Mint Leaves - 1/2 tsp
  • Cardamon - 1/2 tsp
  • Undhiyu nu vaghar
  • Oil - 200 ml
  • Cumin - 1 tsp
  • Sesame - 50 gm
  • Kasuri Methi - 1 tbsp
  • Asafoetida - 1/2 tsp
  • Yam - 250 gm (Ratalu)
  • Tomato - 2 pcs

Steps for Surti Papdi Undhiyu

  • Take a marination bowl. Add yogurt in it. Then add  Undhiyu Masala, green chili paste, turmeric, cumin-coriander powder,garam masala, salt,  green garlic, green methi bhaji and coriander one by one and mix well.
  • Then add all the vegetables one by one and mix it all properly.
  • Heat the oil in the pan. Add cumin and wait till it gets brown and the aroma changes.Add sesame,  kasuri methi,asafoetida, Ratalu(Yam), add tomato. Keep mixing the ingredients while adding it. Cook for 2 minutes
  • Now add the marinated vegetables to the mixture. Cook the whole mixture on low flames to cook for 25 to 30 mins.
  • Putting potli is the final step. Place it in the middle of the sabji. Make sure it is deep inside the whole mixture.
  • Now cover it with the mixture and allow it to flavor for some time. Serve hot.
