Simple Carrot Rice Recipe

Today I am sharing a simple carrot rice recipe with you.

This is a slightly spiced and pleasant recipe. We can prepare in two different ways.

This is the best method to cherish your leftover rice and you can also prepare a fresh one-pot meal for your quick lunch. Let’s get into the simplest method for this recipe.

 

Ingredients of Simple Carrot Rice Recipe

  • Rice - 1 cup (Either basmati or the normal)
  • Onion - 1 Medium sized (sliced)
  • Tomato - 1 medium sized (chopped)
  • Red Chili Powder - 1/4 tbsp
  • Ginger Garlic paste - 1/4 tbsp
  • Cumin seeds - 1/2 tbsp
  • Turmeric powder - a pinch
  • Clove - 2-3
  • Bay leaves - 1
  • Green Chili - 2
  • Carrot - 1/2 cup (Shredded)
  • Ghee - 1/2 tbsp
  • Cooking Oil - 3/2 tbsp
  • Coriander leaves - as needed
  • Curry leaves - as needed
  • Salt and water - as needed

Steps for Simple Carrot Rice Recipe

  • Wash and soak the rice 10-15 minutes before to start cook.
  • Heat oil with a medium flame once hot add cumin seeds, bay leaves, cloves and sliced Chili one by one.
  • Add sliced onion, ginger and garlic paste with a pinch of turmeric powder and fry until it turns transparent shade. Then add tomato and continue to fry until it turned into smooth.
  • Then add shredded carrot and fry 2-3 minutes. Add Chili powder required salt and water.
  • Close the lid and allow to cook for 2-3 whistles. Once it cooked finally add ghee and garnish with coriander leaves. Your Yummy carrot rice is ready to serve. Enjoy this with Raitha or egg masala or potato fry.
  • Carrot Rice with Leftover Rice
  • Heat oil with a medium flame once hot add cumin seeds, bay leaves, cloves and sliced Chili one by one.
  • Add sliced onion with a pinch of turmeric powder and fry until it turns transparent shade. Then add tomato and continue to fry until it turned into smooth.
  • Then add shredded carrot and fry 2-3 minutes. Add Chili powder required salt and allow to cook until it boils more than half.
  • Then add cooked rice and stir the blend thoroughly. Allow cooking 2-3 minutes. finally, add grated coconut and garnish with coriander leaves. Tips: You can try the same method with beetroot too.
