Today I am sharing a simple carrot rice recipe with you.
This is a slightly spiced and pleasant recipe. We can prepare in two different ways.
This is the best method to cherish your leftover rice and you can also prepare a fresh one-pot meal for your quick lunch. Let’s get into the simplest method for this recipe.
Wash and soak the rice 10-15 minutes before to start cook.
Heat oil with a medium flame once hot add cumin seeds, bay leaves, cloves and sliced Chili one by one.
Add sliced onion, ginger and garlic paste with a pinch of turmeric powder and fry until it turns transparent shade. Then add tomato and continue to fry until it turned into smooth.
Then add shredded carrot and fry 2-3 minutes. Add Chili powder required salt and water.
Close the lid and allow to cook for 2-3 whistles. Once it cooked finally add ghee and garnish with coriander leaves. Your Yummy carrot rice is ready to serve. Enjoy this with Raitha or egg masala or potato fry.
Carrot Rice with Leftover Rice
Heat oil with a medium flame once hot add cumin seeds, bay leaves, cloves and sliced Chili one by one.
Add sliced onion with a pinch of turmeric powder and fry until it turns transparent shade. Then add tomato and continue to fry until it turned into smooth.
Then add shredded carrot and fry 2-3 minutes. Add Chili powder required salt and allow to cook until it boils more than half.
Then add cooked rice and stir the blend thoroughly. Allow cooking 2-3 minutes. finally, add grated coconut and garnish with coriander leaves. Tips: You can try the same method with beetroot too.
