Ingredients of Pudhina Rice

  • Rice boiled - 1 bowl
  • Puthina/Mint leaves - 1 small bunch
  • Onion -1 medium (sliced)
  • Green Chili - 2 (sliced)
  • Red Chili - 2
  • Ginger-Garlic Paste - 1/4 tbsp (optional)
  • Fennel Seeds - 1/4 tbsp
  • Chana Dal - 1 tbsp
  • Cashew - 3-4 (optional)
  • Fried Ground Nuts - 1-2 tbsp
  • Pepper Powder - 1/4 tbsp
  • Bay Leaves -1
  • Cloves - 2-3
  • Mustard Seeds -1/4 tbsp
  • Oil - 2 tbsp
  • Ghee - 1/2 tbsp (optional)

Steps for Pudhina Rice

  • Wash and soak the rice before 10-15 to start.
  • Meanwhile, wash and blend the mint leaves with fennel seeds.
  • Boil the rice with half salt and keep it aside to cool. (Don’t overcook)
  • Heat oil with a medium flame once hot add muster seeds when it splits add bay leaves, cloves, curry leaves, chana dal one by one.
  • When you get nice aroma add sliced green Chili, red Chili, onion and ginger garlic paste one by one. fry the stuff until it turns transparent.
  • Then add blended mint leaves with appropriate salt (don’t forget that half of the salt already added in rice) and continue to cook until it gets separated from the oil.
  • Once it did add rice and blend the mix thoroughly and continue to cook 5-6 minutes under a lower flame.
  • Finally, add ghee and garnish with fried ground nuts, cashew and coriander leaves.
  • Homemade style simple & healthy mint leaves rice is ready to serve. This goes superbly with any kind of fries, chips, boiled egg, papad, and curd.
