Paruppu Usili – Paruppu Usili Recipe

Parrupu Usili is a typical classic dish in India. It goes well with buttermilk gravy, sambar and rasam. Basically, we can prepare usili with different vegetables (beans, carrot, cabbage, cauliflower, cluster beans and beetroot). Here I used beans and you can try the same technique for other vegetables too.

Parrupu Usili is a source of protein and fiber. This will suit all age group peoples, especially for growing kids.

In the original version people will not use onions and garlic but here I used to enhance the taste. It’s up to your wish to use.

Tips: Here I used chana dal but you can go with any kind of dals (moong, toor etc).

Ingredients of Paruppu Usili

  • Green Beans - 1 bowl (Finely chopped)
  • Chana Dal - 1/2 cup (soaked)
  • Red Chili - 2-3
  • Asafoetida - a pinch
  • Turmeric Powder - a pinch
  • Onion -1 (medium-sized)
  • Garlic - 2-3 pulses
  • Salt and water - as required
  • Oil - 1 tbsp
  • Mustard Seeds - 1/2 tbsp
  • Curry  Leaves

Steps for Paruppu Usili

  • Wash and Soak the Chana dal about 1 to 2 hours. Then add 1 red Chili and 1/4 tablespoon of salt and grind into a slightly coarse texture.
  • Pour the mix into idli mold and allow to cook until it gets boiled. Once it boiled aside it to cool. Once it cooled crumble this with your fingers.
  • Meanwhile, Boil the beans about 5-7 minutes with a pinch of salt.
  • Then heat the oil with a medium flame, once hot, add mustard seeds, when it splutters, add curry leaves, red Chili and smashed garlic, wait a few seconds until it turns the color.
  • Now add the crumbled dal and continue to fry for a few minutes. Then add boiled beans and stir the mix thoroughly and allow to cook for a few minutes under a low flame. (check salt and tune to your taste.) Once it did switch off the flame and The yummy mouth-watering beans paruppu usili is ready to serve.
