Soubise Sauce Pasta is a fusion recipe with French sauce & Italian pasta.

– Butter - 25 gms (unsalted) – All-Purpose Flour - 1.5 tbsp – Clove - 2-3 pcs – Salt - 1/2 tsp – Black Pepper Powder - 1/2 tsp – Nutmeg Powder - 1/2 tsp – Bay Leaf - 1 pc – Milk - 1 glass – Butter - 50 gms (unsalted) – Onion - 2 pcs (large) (chopped) – Tomato Puree - 2 pcs (medium) (grind) – Water - as required – Salt - 1 tbsp – Oil  - 1 tbsp – Pasta - 300 gms – Salt - 1/2 tsp – Butter - 2-3 tbsp (or as per taste) – Red Chili Flakes - 1 tsp (or as per taste)

Ingredients

Step - 1

Heat butter in a pan. Add all-purpose flour and cloves. Roast them until the bubbles appear.

Step - 2

Add salt, black pepper powder, nutmeg powder, and bay leaf to it. Mix them.

Step - 3

Then add milk to the pan and cook it for some time. Keep it aside.

Step - 4

Take another pan and again melt butter. Add chopped onion in it and saute them until the onion turns soft.

Step - 5

Put them in a mixer jar and grind them to a paste.

Step - 6

Transfer the onion paste to a paste. Also, add the previously made milk mixture.

Step - 7

Then add tomato puree to it. Do this in batches. Soubise sauce is ready.

Step - 8

Add water, salt, and oil to a deep pan. Cover the pan with a lid and let it boil. Then add pasta and again cover it with a lid and boil the pasta until they are soft.

Step - 9

Put the pasta in a sieve over a bowl. Pour cold water into it and drain.

Step - 10

Pour the sauce into a pan. Also, add salt and boiled pasta.

Step - 11

Add butter to it and mix. Also, add red chilli flakes. Mix one final time.

Soubise Sauce Pasta is ready.
